Question by Con: What can I substitute for saltpetre for spicing beef?
All my recipes call for a small amount of saltpetre ,but this seems to be banned( ?). I used to get it in the chemist/ pharmacy shops , years ago , but none do it now and stock is gone.All say , cannot be got .

Potassium Nitrate can be used and the Asian shop sell Niter a form of nitrate, they use it in same dishes like dim sum steamed beef balls, if you cannot find it, get some coarse salt it is as good or Maulden sea salt.
