Question by Christine C: What is in the soy sauce in dim sum restaurants that makes it so sweet?
When you buy soy sauce, it’s dark and purely salty. What is it in Dim Sum soy sauce where the color is a light brown and it tastes sweet? I tried putting sugar in store-bought soy sauce, but the color is still dark and it tastes awful.

try adding some water and brown sugar (or regular) and boil it to thicken it down a little.
